It builds on the traditional Casio e Pepe by adding a complex flavor of the delicious trio of peppercorns. Here’s how to make it yourself!
Ingredients
- 8 oz. cavatelli pasta
- 2 Tbsp butter
- 2 Tbsp salt
- 2 Tbsp flour
- 1 Tbsp shredded Parmesan cheese
- ¼ cup shredded aged Vermont white cheddar cheese
- 1¼ cups whole milk
- ¼ tsp pink peppercorns, toasted and ground
- ¼ tsp green peppercorns, ground
- ½ tsp black peppercorns, toasted and ground
- Minced chives, for garnish
Cacio e Pepe Mac and Cheese: Directions
Step 1
Bring water to a boil in a pot. Add some salt and then place the pasta inside. Let it cook for about eight minutes or until it’s al dente. Strain it from the water and return it to the pot.
Step 2
Melt the butter in a small heavy-bottomed saucepan over low heat. Whisk in the flour and cook for about two minutes, whisking constantly. Then, whisk in the milk and keep stirring for another three to five minutes until the mixture thickens enough to coat the back of a spoon. Add the cheddar and stir, so it melts evenly. Stir in the peppercorns.
Step 3
Add the sauce to the pasta in the pot and stir in Parmesan cheese. Season with salt and black pepper to taste, and serve garnished with chives. Enjoy your favorite comfort food with a twist!
