Beyond Comfort Food: Wolfgang Puck’s Cacio e Pepe Mac and Cheese

Wolfgang Puck’s Cacio e Pepe Mac and Cheese

Cheesy and peppery, Casio e Pepe is undeniably one of the trendiest pasta dishes right now. In fact, it’s so trendy that none other than celebrity chef Wolfgang Puck has been serving his own version at the Oscars Governors Ball in the last few years. While mac and cheese is the ultimate comfort food, Puck’s recipe takes it to a whole new level.

The Ultimate Comfort Food Recipe

Not every comfort food has to be something you just “put together” with zero effort. Puck’s take on mac and cheese with a fancy twist is exactly what you’ve been craving for, and didn’t even know it! It builds on the traditional Casio e Pepe by adding a complex flavor of the delicious trio of peppercorns. Here’s how to make it yourself!

pink, green, and black peppercorns

  • 8 oz. cavatelli pasta
  • 2 Tbsp butter
  • 2 Tbsp salt
  • 2 Tbsp flour
  • 1 Tbsp shredded Parmesan cheese
  • ¼ cup shredded aged Vermont white cheddar cheese
  • 1¼ cups whole milk
  • ¼ tsp pink peppercorns, toasted and ground
  • ¼ tsp green peppercorns, ground
  • ½ tsp black peppercorns, toasted and ground
  • Minced chives, for garnish

Cacio e Pepe Mac and Cheese: Directions

Step 1

Bring water to a boil in a pot. Add some salt and then place the pasta inside. Let it cook for about eight minutes or until it’s al dente. Strain it from the water and return it to the pot.

Step 2

Melt the butter in a small heavy-bottomed saucepan over low heat. Whisk in the flour and cook for about two minutes, whisking constantly. Then, whisk in the milk and keep stirring for another three to five minutes until the mixture thickens enough to coat the back of a spoon. Add the cheddar and stir, so it melts evenly. Stir in the peppercorns.
