This Pepper and Onion Pizza Is Super Easy to Make on a Grill

Healthy Pepper and Onion Pizza

Ingredients:
- 1 small red pepper, quartered
- 1 small yellow pepper, quartered
- 1 small poblano pepper, quartered
- 1 small red onion, sliced into rings left attached
- 2 tbsp. olive oil, divided, plus more for greasing
- Kosher salt and pepper
- 1 small clove garlic
- 1 tbsp. red vino vinegar
- 1 tsp. fresh oregano leaves, finely chopped
- 1 cup flat-leaf parsley leaves
- ½ whole-wheat pizza dough, at room temp for one hour if refrigerated
- 2 oz. provolone cheese, thinly sliced
The Recipe
Start by heating your grill to medium-high. Take a large bowl, toss in the peppers and onion, and add 1 tbsp oil and 1/4 tsp each salt and pepper. Grill the veggies until you achieve a tender texture. It should take you four to five minutes per side for the onion and six to eight minutes per side for the peppers. Then cut and separate the onion rings and chop the peppers into small bites. Grate the garlic into the same bowl and drizzle on the vinegar, oregano, and the remaining oil, and stir. Add the grilled vegetables and combine everything. Toss with some parsley as well. When you get to the dough, grill it, and once you flip it to indirect heat, put the cheese and pepper mixture on top. Keep the dough on the grill until cooked properly. Voilá! Your healthy pizza is ready to serve.
