Duff Goldman’s S’More Cookies Are a Delicious Treat

Duff Goldman recently wrote a kid-centric cookbook dedicated to his love for cookies. The Holiday Baking Championship host has launched a DIY decorating business called Duff’s Cake Mix. He’s been obsessed with cookies since he can remember. Goldman says these treats are a great portal into baking. The following S’More cookie recipe comes straight from his new book, Super Good Baking for Kids.

The combination of the classic graham cracker with fire-roasted marshmallows and chocolate chips is otherworldly. So, he got inspired and paid homage to the traditional recipe in his new cookbook. Ingredients ¾ cup whole wheat flour ¾ cup all-purpose flour 1 teaspoon baking soda 2 teaspoons cinnamon ½ cup butter at room temperature 1 pinch of kosher salt ¾ cup brown sugar 2 tablespoons granulated sugar 6 tablespoons honey 1 egg plus 1 egg yolk 16 ounces chocolate chips 24 big marshmallows

S’More Cookie Recipe: Preparation Method

Roll up your sleeves and start mixing! Below is this S’More cookie recipe’s step-by-step preparation method.

Step one Cream the sugar and butter together with a mixer. Whisk the two kinds of flour, baking soda, salt, and cinnamon in a separate bowl. Add the egg and vanilla extract to the sugar and butter batter. Then, combine the dry ingredients with the egg mixture, adding half the chocolate chips. Let the mixture chill for an hour afterward.

Step two Preheat the oven to 375 degrees. Line a sheet pan with paper and line the cookies in the pan. Bake for up to 12 minutes until the S’More cookies have turned golden brown.

Step three Melt the remaining chocolate, flip half of the cookies over, and spread a thin layer of chocolate over the flipped half.

Step four Toast each marshmallow on a stick until gooey. Put it on a cookie that doesn’t have chocolate on its underside and squish it with one that does.
