What’s Needed

This recipe is for four big rounds of chaffles, but the recipe is easily scaled up to feed more people. For this recipe you will need:

  • Five lightly-beaten eggs
  • Two and a half cups of shredded mozzarella
  • Half a cup of grated parmesan
  • One clove of garlic – grated
  • Two tablespoons of chopped chives
  • Two tablespoons of chopped parsley
  • Two tablespoons of melted butter
  • Black pepper to taste

Heat Up the Waffle Iron

Let the waffle iron heat up. In the meantime, whisk together the eggs, mozzarella, garlic, chives, and pepper in a medium bowl. Brush both sides of the waffle iron lightly with the melted butter. Sprinkle the bottom half of the iron with parmesan first to make the end result crispier. Ladle in half a cup of batter, spreading it properly. Close the iron tightly and cook the batter for three to five minutes or until your chaffles look golden brown. Repeat the process three more times or until you’re out of batter!

Although best enjoyed fresh, they can be prepared in advance and warmed up for serving one of the following days.
